WTF3 has used the Vinmetrica SC 300 for a season now and can provide its capability to other vintners in the area. The SC 300 measures pH, Titratable Acid and Free and Bound sulphite (SO2). pH is a general measure of the acidity of the wine and the desired level is different between red wine and white wine. It is the quickest measure to do and gives an indication if there is anything wrong with the must before primary fermentation is started.

Titratable Acid is a measure of the equivalent units of Tartaric Acid in the must, and is used to adjust the amount of acid to be added. Most wines have a target range of TA as well as a preferred ratio of malic to tartaric acid. Wines made from local grapes need an accurate reading of TA to assist in the reduction of TA to acceptable/drinkable levels. It is also used in malolactic fermentation as a health check on the malic to lactic acid conversion.

Free and Bound SO2 measures are important during the primary and secondary fermentation stage in order to prevent spoilage. If you are trying MLF, then it is important to monitor and check the SO2 levels and keep them as low as possible to prevent a failed MLF. Before a wine is laid down for any period of time, the SO2 levels should be checked and normally increased to ensure stable aging.
